Strawberry Brownies

I had such a wonderful response (via pinterest) with my strawberry cake mix cookies.  I thought why not make them into brownies.  And it is SO easy!

INGREDIENTS:

1 (18.5 oz) box Strawberry cake mix
2 eggs
1/3 cup oil

Glaze:

Powered Sugar
Milk or water

DIRECTIONS:

1. Combine cake mix, eggs and oil.  The batter will be thick.  Spray a 9 X 13 baking pan with cooking spray.  Using your fingers press dough into pan.

2.  Bake at 350 degrees for 12 to 14 minutes.  Or until edges of the brownies are light brown.

You can let them cool and eat as is.  Or glaze them right out of the oven hot!  Or let cool then glaze them.

Cake Mix Cookies–Rolo

So very easy….a cave man could do it!  ;)

And Yummy too!

Ingredients:

1 boxed chocolate cake mix (I used Devil’s food)
2 eggs
1/3 cup vegetable oil
Bag of Rolo Candy
Powered Sugar for dusting

Directions:

Preheat oven to 350 degrees.

Combine the cake mix, oil and eggs.  This will be pretty stiff dough.

Unwrap all the rolo candies.

I use a cookie scoop ( a little over a tablespoon in size) to scoop out perfect ‘balls’), then take a single rolo and smoosh it in the center and then roll the dough around the rolo.  Place on a cookie sheet.

Bake for 9 to 10 minutes.  Let stand a couple of minutes on the cookie sheet before trying to move them.  Dust with powdered sugar.

Makes about 2 and a half dozen yummy cookies.

*Note: If you can’t find rolo’s in your area.  (my local Wal-mart doesn’t carry them) Look in candy places in your local mall.  I found some there.  I also found them at my local Dollar Tree!

Mini-Donut Cupcakes

Kids just love them!  They are pretty tasty!

Simple recipe!

Ingredients:

One Box yellow cake mix ( You can only use a white cake mix or yellow cake mix for this recipe to work.)
Ingredients needed on the cake box
One table spoon of Nutmeg
One cup of sugar
2 tsp. cinnamon

Directions:

Preheat oven to 350 degrees.

Grease 24 mini- muffin pan cups. Combine sugar and cinnamon in small bowl; set aside.

Prepare cake mix according to package directions; stir nutmeg into batter. Fill prepared muffin cups two-thirds full.

Bake about 12 minutes or until lightly browned and toothpick inserted into centers comes out clean.

Remove cupcakes from pans; roll in sugar mixture until completely coated. Serve warm or at room temperature.

Apparently my husband really likes these cookie cakes. He told me his mom made a version of it for him and his siblings growing up.

To say the least these were a HUGE hit with everyone!

Ingredients:

  • ½ cup butter
  • 18.25-oz. chocolate cake mix (I used a devils food cake mix.)
  • 2 eggs, well-beaten
  • 1 tablespoon water
  • ½ cup confectioner’s sugar, placed in a shallow bowl

Directions:

  1. In a large mixing bowl, use a pastry blender (or fork) to blend ½ cup butter and an 18.25-oz. package of chocolate cake mix, until the mixture is crumbly.
  2. Add 2 well-beaten eggs and 1 tablespoon water and stir until smooth. The mixture will be extremely THICK! Let mixture rest 5 minutes.
  3. Use a spoon to get enough of the mixture out to form a 1-inch ball (I use a cookie baller). Drop the mixture into the shallow bowl of confectioner’s sugar.
  4. Use your hands to roll the mixture into a ball, coating it with confectioner’s sugar.
  5. Place the coated chocolate ball in a baking pan that has been lined with parchment paper. Continue until all chocolate mixture has been made into coated chocolate drops. Bake at 375 degrees  for 8 to 10 minutes.
  6. Cool 1 minute in pan. Remove to wire rack and cool completely.

These are tremendously quick and easy to make, and they look beautiful and taste wonderful!   These can be whipped up in a hurry if you have unexpected company.
