Strawberry Cake Mix Cookies

Another VERY easy to make recipe.  So good!

While making these little cookies; it made me think of my grandma.  She always made me a Strawberry Cake for my birthday when I lived in Oklahoma.  It was one of the highlights of my birthday to get a strawberry cake from her.  I just know she would have loved these little cookies!

You can also make these several ways:

Plain
With a dusting of Powdered Sugar
With White icing
Drizzle with chocolate
You could even add white chocolate chips –which I would think would be just dreamy in this cookie!

Ingredients:

1 Strawberry boxed cake mix
2 eggs
1/3 cup oil

For Icing:

2 cups to 2  1/2 cups powered sugar (also known as icing sugar)
2 to 4 tablespoons milk

Directions:

1. Preheat oven to 375 degrees. Line a cookie sheet with parchment paper.

2. Add cake mix, eggs and oil and combine.  This will become a dough so it will be thick.

3. Once mixed place a tablespoon to a tablespoon and half sized balls of dough on the cookie sheet.  I used a cookie scooper to make it a little easier.

4.  Cook in a preheated 375 degree oven.  Bake for 6 to 9 minutes.  Mine was done perfectly at 6 minutes 45 seconds! Be sure to watch it because ovens do vary.

5.  Cool for 2 minutes on the cookie sheet before cooling on a cookie rack.

6.  Cool the cookies completely and add your favorite toppings.  Plain, with icing, powered sugar…etc.

Directions for the icing:

Combing Powered sugar and milk and stir.  I liked a thicker consistency for this icing.  I believe I used 2 cups of powered sugar and 4 tablespoons of milk.

Place on cookie and let it sit to harden.

This cookie would be super fun to take to church functions, pot lucks…..or to make for Valentines Day.

Cake Mix Cookies–Rolo

So very easy….a cave man could do it!  ;)

And Yummy too!

Ingredients:

1 boxed chocolate cake mix (I used Devil’s food)
2 eggs
1/3 cup vegetable oil
Bag of Rolo Candy
Powered Sugar for dusting

Directions:

Preheat oven to 350 degrees.

Combine the cake mix, oil and eggs.  This will be pretty stiff dough.

Unwrap all the rolo candies.

I use a cookie scoop ( a little over a tablespoon in size) to scoop out perfect ‘balls’), then take a single rolo and smoosh it in the center and then roll the dough around the rolo.  Place on a cookie sheet.

Bake for 9 to 10 minutes.  Let stand a couple of minutes on the cookie sheet before trying to move them.  Dust with powdered sugar.

Makes about 2 and a half dozen yummy cookies.

*Note: If you can’t find rolo’s in your area.  (my local Wal-mart doesn’t carry them) Look in candy places in your local mall.  I found some there.  I also found them at my local Dollar Tree!

~Enjoy!~

Rolo & Apple Galette

If you like Apples and Rolo’s—I bet you will like this!

Ingredients:

3 Apples Chopped (I use Granny Smith)

3 Tablespoons butter

3 Tablespoons light brown sugar

1 teaspoon cinnamon

A dash of nutmeg

1 egg (for an egg wash)

1 prepared pie crust

handful of Rolo’s (sliced)

Directions:

1.Start by chopping a couple of Granny Smith apples and cooking them in the butter. Add cinnamon,a dash of nutmeg and light brown sugar. Cook for about 5 minutes until apples are tender.

2.  Let apples cool a bit before placing them onto the pie crust (I give mine anywhere from 5 to 10 minutes to cool).

2.  Unroll prepared pie crust onto parchment lined cookie sheet. Place apple mixture in the center of the pie crust covering it all; leaving  about an inch and half from the sides.

3. This is the fun part.  Place sliced Rolo’s all around the apple mixture.

4. Now gather the sides up around the apple mixture. Doesn’t have to be perfect or pretty!  It taste the same whether pretty or unsightly. ;)

5. Now take the egg and beat it in a small bowl and brush on the crust.

6.  Bake it at 350 for about 40 minutes, depending on your oven. Just keep an eye on it so the pastry doesn’t burn.

7.  Let cool completely before serving.

~Enjoy!~
